Directions

Step 1

Position rack in centre of oven, then preheat to 200°C (400°F). Spray an 8 x 8 inch (20 x 20 cm.) baking dish with oil.

Step 2

Whisk eggs with milk, corn starch and sugar in a medium bowl until combined. Then whisk in corn kernels, cream-style corn, butter and salt. Season with pepper. Pour corn mixture into prepared dish. Scatter croissants overtop.

Step 3

Bake until a skewer inserted in centre of pudding comes out clean, and croissants are golden-brown, about 40 mins. Let stand for 15 mins. before serving.
