Directions

Step 1

In a bowl, combine mayonnaise, mashed avocado, and lime zest and juice. Mix until evenly blended. Add salt and pepper to taste. Set aside.

Step 2

Put four slices of prosciutto on a plate lined with paper towels. Cover them with another sheet of paper towel. Cook 1.5 min in the microwave at high power. The prosciutto should have the texture of crispy bacon.

Step 3

Toast bread slices.

Step 4

Put 1 leaf lettuce and 4 cucumber rounds on each of 4 slices toast.

Step 5

Cover with lobster meat and fresh dill, and garnish with 1–2 spoonfuls of lime and avocado mayo.

Step 6

Add a half-slice of prosciutto on top of the other ingredients.

Step 7

Cover the four sandwiches with 4 more slices of toast.

Step 8

Repeat steps 4–6.

Step 9

Finish with 4 more slices of toast to complete the sandwiches.

Step 10

Cut sandwiches in 2 or 4 and hold them together with toothpicks.

Step 11

Serve with homemade coleslaw or slices of fresh tomato.
