From side dishes and salads to stir-fries and pastas, peas are at ease in a variety of dishes. They also add sweet green goodness to soups and stews, meat pies and purées.

When buying fresh peas look for crisp, evenly green pods that are free of blemishes and discolouration. Use fresh peas as soon as you can, as they’ll only last a day or two in the fridge. For best results, store them in a sealed bag.
