This fall favourite is a healthy source of beta-carotene and potassium in addition to vitamin C. Popular for its easy-to-peel surface, butternut squash can be prepared in so many ways. Toss oven-roasted cubes into pasta or risotto or purée into a velvety soup or sauce.

Like other winter squashes, butternut is at its peak during fall and winter but will keep for months in a cool, dry place.
