These delicious desserts are fantastic as they are – or give them a delightful twist in a snap! Here are three ways to whip up something cool.
Fruit Pie Shake
To make 2 small shakes, in blender, whiz up a 4 in. (10 cm) wide wedge of fruit pie, 5 or 6 scoops of vanilla or fruit-flavoured ice cream and 2/3 cup (150 mL) milk until smooth.
Fun Filled Ice Cream Sandwiches
- Stand ice cream sandwich on its side. Run a large knife under warm water; wipe dry.
- Slice lengthwise to cut only the ice cream layer in half. Spread chocolate, caramel sauce or jam on 1 side of ice cream.
- Sprinkle with thinly sliced strawberries or bananas, cookie crumbs, breakfast cereal or nuts. Don’t overstuff. Gently press sandwich back together.
- Freeze on foil-lined baking sheet until firm, about 1 hr.
Ice Cream Cheesecake
- Tightly press plastic wrap into bottom and up sides of 9 in. (23 cm) round cake pan, with overhang. In large bowl, melt 1/4 cup (60 mL) butter; mix in 1 1/4 cups (300 mL) cookie crumbs and 2 tbsp (30 mL) sifted icing sugar.
- Press into bottom of pan; freeze. Beat 1 cup (250 mL) 35% whipping cream with 1/4 cup (60 mL) sugar until fluffy; set aside. Mark 2 1/2 cups (625 mL) level on blender with piece of tape for easy reading.
- Roughly in thirds, blitz smooth 375 g (1 1/2 pkg) cream cheese, cubed, with up to 2 cups (500 mL) ice cream (you might not need all of it to reach the marked level). Blitz in 2 tsp (10 mL) lemon juice.
- Fold in whipped cream mixture. Pour into pan. Freeze until firm, about 6 hr.
- To serve, lift out and let soften slightly before slicing with hot knife. Garnish with cookie slices or fresh fruit.
