Ingredients

35% cream, divided

pure vanilla extract

clementine, peeled and sliced into rounds, for garnish

Directions

Step 1

Combine chocolate chips with ½ cup (125 mL) cream and salt in a large heat-proof bowl. Microwave on high until half melted, about 30 sec. Stir with a spatula until completely melted. Set aside to cool completely.

Step 2

Beat remaining 1 cup (250 mL) cream with sugar and vanilla extract in a medium bowl, using an electric mixer on medium-high, until soft peaks form, 1 to 2 mins.

Step 3

Fold one-third of cream into cooled chocolate mixture until no streaks remain. Then gently fold in remaining cream until no streaks remain. (Don’t over-fold or it will lose volume.)

Step 4

Spoon mousse into four ¾ cup (175 mL)-sized serving glasses or dishes. Refrigerate until chilled, about 1 hr.

Step 5

Just before serving, garnish mousse with whipped cream, clementine rounds and popcorn.

Tip

You can make more servings by dividing mousse into smaller serving vessels.
