Directions

Step 1

Preheat oven to (180°C) 350˚F. Line an 8 X 8 in. (20 X 20 cm) baking pan with parchment paper. Set aside.

Step 2

Pit the dates, if necessary. Roughly chop the dates and place in heatproof bowl. Pour in just-boiled water to just cover. Set aside to soak 10 min.

Step 3

Meanwhile, cut the butter into small cubes; place in a large microwaveable bowl with 1 cup (250 mL) of the chocolate chips. Heat in the microwave, uncovered, on HIGH in 30 sec. intervals until the butter and chocolate are melted; whisk smooth. Set aside to cool slightly. (Tip: Or melt butter and chocolate over a water bath in a double-boiler.)

Step 4

Drain the dates, discarding the soaking water. Place dates in a blender with the eggs. Process, scraping down sides, until the dates are in small pieces (the mixture will be almost smooth). Add date mixture and vanilla extract into the melted butter and chocolate; whisk until combined.

Step 5

In a separate small bowl, sift together the flour, cocoa powder and salt. Gently fold the dry ingredients into the chocolate mixture to combine, then fold in the remaining ½ cup (125 mL) chocolate chips.

Step 6

Scrape the batter into the prepared pan, smoothing into an even layer. Bake 20 to 25 min., until the top looks set but the middle is still fudgy. Allow brownies to cool 30 min. before slicing into 16 squares.
