Shiitake Mushrooms, stems removed, sliced into 1 in. (2.5 cm) pieces

Compliments Organic Oyster Mushrooms, torn into 1 in. (2.5 cm) pieces

Samyang Ramen Noodles (dried ramen)

green onion, finely sliced on bias

Directions

Step 1

In a bowl, mix together the broth, Takumi sauce, brown sugar and black pepper; set aside.

Step 2

Heat the canola in a large pot over medium-high heat. Sauté the mushrooms until lightly browned 8 to 10 min. Push the mushrooms to the sides, creating a well in the centre of the pan. Pour the sauce mixture into the well; put the ramen noodles into the sauce. (Note: Seasoning packets included in the ramen bags are not required for this recipe.) Cook 1 min. Turn noodles over in the sauce; cook another min. Use tongs or forks to separate the noodles, tossing with the sauce and mushrooms. Continue cooking until the sauce is mostly absorbed and noodles are tender, about 1 min.

Step 3

Garnish with green onions and serve with Saucy Braised Pork Belly.
