1 cup cherry tomatoes

mango spread or chutney

Directions

Step 1

Whisk eggs with milk, curry powder, garlic powder, onion powder and salt in a large shallow dish. Season with pepper. Soak bread slices, flipping halfway, 5 mins. (Depending on the size of your dish, you may need to do this in two batches.)

Step 2

Combine onion with cilantro stems and chili in a small bowl. Sprinkle half of onion mixture evenly over soaked bread slices.

Step 3

Melt 2 tbsp (30 mL) butter in a large non-stick frying pan over medium-high heat. Carefully add 4 slices of bread, onion-side-down, to pan. Sprinkle half of remaining onion mixture overtop. Cook until bottom is golden, about 3 mins. Flip bread. Cook until bottom is golden, 2 to 3 mins. Transfer to a plate. Repeat with remaining 2 tbsp (30 mL) butter, bread and onion mixture.

Step 4

Serve topped with cherry tomatoes, cilantro leaves and mango spread.
