Directions

Step 1

In a large mixing bowl, add the ground nuts, crushed ginger snaps, icing sugar, cocoa powder and orange zest; mix to combine. Add the rum and honey, and mix well until a moist dough forms. Cover and chill until firm, at least 30 minutes.

Step 2

Shape the dough into 1 inch (2.5 cm) balls and transfer to a parchment paper-lined tray. Cover and chill, at least 15 minutes.

Step 3

Roll the rum balls in chopped pecans, icing sugar, cocoa powder or dip them in melted chocolate. Place in airtight container and refrigerate overnight or for up to two weeks.

Tip

Send out invitations a few weeks in advance to 8-10 people, asking participants to share their choice of cookie when they RSVP to avoid duplicating cookies.Confirm the number of participants, and ask as each guest to bring a set of a dozen cookies for each guest attending, along with printed recipe cards and packaging supplies.Set up a packaging station on a large work table for guests to wrap their cookies. Ribbon, cellophane, boxes or tins, parchment paper, scissors, tissue paper, labels, pens, tape and twine all come in handy for packaging.Have coffee, tea and snacks on hand so your guests won’t be tempted to eat the cookies while packaging them! TIP - These rum balls become more flavorful when prepared in advance; store in airtight container in the fridge for up to two weeks.TIP - Moisten your hands with cold water to prevent the rum balls from sticking while rolling.
