Ingredients

2 cups
whole cooked and peeled chestnuts (10 oz/300 g)
500 mL
1 cup
sugar
250 mL
1 tsp
vanilla extract
5 mL
¼ cup
35% whipping cream
60 mL

Directions

Step 1

Combine 1 cup (250 mL) water, chestnuts, sugar and vanilla in a medium size saucepan. Bring to a boil over medium-high heat. Reduce heat and simmer 20 min., or until syrup has thickened and chestnuts are softened. Remove from heat; cool.

Step 2

In food processor, combine chestnut mixture and whipping cream. Pulse until nearly smooth, about 1 min. Serve with assorted desserts such as ice cream, crepes and fruit or with pancakes. Store chilled. Reheat for serving.

Tip

This sauce thickens as it cools so re-heat just before serving, adding in more cream if necessary to thin to desired consistency.
