Sobeys: How to Spatchcock a Chicken

This technique used to flatten a chicken is a good skill to learn – it not only reduces cook time (as compared to a whole bird), but it also results in meat that is more moist. Follow our video for step-by-step instructions on this easy technique.

Step 1: Place chicken breast-side down. To remove the backbone, cut down the right side of the backbone, then cut down the left side of the backbone.

Step 2: To flatten the chicken, press down firmly on the wings to crack the breast bone.

Kitchen Tip: Refrigerate the backbone for later use in making chicken broth.
