Directions
Step 1
In a large saucepan, brown the back ribs in oil over high heat. Season with salt and pepper. Set aside in a bowl.
Step 2
In the same saucepan, soften the onions, carrots, celery, and garlic. Season with salt and pepper. Add the tomato paste and cook, stirring, for 1 minute over high heat.
Step 3
Return ribs to saucepan and add remaining ingredients. Bring to a boil and simmer, stirring and scraping the bottom of the saucepan regularly, for about 3 1/2 hours or until it meat detaches easily from bones.
Step 4
Transfer ribs from sauce to a plate and set aside to cool. Remove bones from ribs and return meat to sauce. Adjust seasoning.
